Ever seen a live squid in person? Ever wanted to go fishing? Do you like fresh fish? Well there is a shop where you can fish for live squid swimming in a water tank and the shop staff will clean and prepare the squid right in front of you, allowing you to eat the freshest squid possible.
Other than at aquariums, there aren't any places to see squid swimming around. However, at Hakodate's super popular "Hakodate Asaichi", not only can you see squid swimming around, you can also catch and eat fresh squid. To catch the squid, you simply take the fishing rod, hook the the squids fin, and pull it out. Super easy for beginners.
Fresh squid are also quite transparent. Also, the texture and thickness changes, depending on if it's sliced vertically or horizontially. This is due to the squids muscles running horizontially. Cutting the squid horizontially separates the muscle fibers giving it a soft texture. Cross-section slices are then made to bring out the good sweet flavor.
From swimming around in the tanks, to becoming delicious sashimi in a matter of minutes. The slightly translucent meat of the squid shines in the light. Really looks delicious, especially if you put some soy sauce and ginger on it.
The squids body still continues to move shortly after being sliced. Don't worry it's not becoming a zombie. This just shows you just how fresh the squid is, so worry not and enjoy. It's slightly crunchy texture is sure to get you coming back for more. The light brownish organs or "wata" of the squid have quite a rich taste and are a popular menu item. The appearance may be a little daunting, but it's quite delicious! "Wata" is also used in the dish shiokara which is a type of salted fish organ dish.
There are many different dishes and cooking methods in Japan that are not available in other countries. Most likely things you've never seen in your own country, but if you can muster up the courage and try them, a whole new world of foods will be available to you!
