Ramen is one of the most well-known Japanese foods, second only to sushi. One thing you may not realize though is that there are many many different types of ramen. You could honestly eat a different ramen every day for a year and still not have tried all the different flavors available.
There are 4 main types of ramen. They are "shio"(salt), "shoyu" (soy sauce), miso, and "tonkotsu" (pork bone broth). The type of ramen at the famous ramen shop ICHIRAN is of the tonkotsu variety. Tonkotsu ramen is really popular in the southern island of Fukuoka, especially in the area of Hakata, so it is often refered to as Hakata-ramen.
ICHIRAN is a famous chain ramen store that can be found all-over Japan that allows people to enjoy the delicous rich Hakata-ramen from anywhere in Japan. The all-wheat flour noodles are drenched in super rich, and super flavorful pork-bone broth. It is typically topped with thinly sliced pork and soft-boiled creamy eggs. At ICHIRAN, there are quite of few customization options to allow you to get the best bowl of ramen you can imagine. Like many ramen shops, you can customize the hardness of the noddles, the richness, and even the amount of oil/fat that is in the broth. This is all done with a small sheet of paper that you fill out and give to the staff when you are ready to order. There is also a place to write how spicy you'd like your ramen. Be warned though, if you are not good with spicy food, It's best to not go over 2 times the normal amount of spice.
The seats are individually divided allowing customers to focus completely on their yummy noodles. If you come in a group though, don't worry! Most of the dividers can be removed so you can enjoy this Fukuoka specialty together.
