Fukuoka may be lesser known than some of the larger, more famous cities of Japan, but it has a fun, contemporary culture alongside a rich history of culinary distinction. In addition to Hakata Ramen, two popular styles of nabe (hotpot) cooking were invented in Fukuoka: mizutaki and motsu nabe. This video shows people enjoying mizutaki, which simply means “liquid cooking.” As you can see, it involves a bit more interaction than your usual sit-down meal! Mizutaki is popular for group parties throughout Japan, since it allows for people to choose from a variety of ingredients, and cook them at their own pace.
Sitting around a large nabe pot, diners add plenty of fresh, raw ingredients and meat to a boiling-hot stew and cook them together. This includes everything from various greens to mushrooms, carrots, potatoes, pork, chicken, and more. In the video, you can see them scooping off chicken meatballs, called tsumire, off a bamboo tube. This is a traditional way of enjoying this kind of hotpot, and feels nice and old-fashioned. Some places even have mozarella cheese you can cook up! After adding the ingredients, you usually only need to wait a few moments before the ingredients are ready to eat, after which you can bring them out onto a special dish to cool and dip it into different sauces. Some popular sauces include ponzu, a dark citrus-flavored vinegar, and creamy ground-up sesame sauce.
