More commonly known as "Hibachi" in the rest of the world, Teppanyaki is a showy style of cuisine that originated in Japan. In Japan, teppanyaki refers to food that is cooked on a teppan (or an iron plate), such as shrimp, steak, okonomiyaki, yakisoba, morisoba. Interestingly enough, these types of teppanyaki restaurants are generally less popular with the Japanese than they are with foreigners, who appreciate the performance aspect of the food preparation. That may explain why teppanyaki has taken off so well in North America, which spearheaded the Japanese food boom worldwide.
